Kabuli Pulao (Afghani Pulao) With Green Mint Raita
Ingredients For Pulao:
Basmati Rice soak 500 gm
Mutton 1 kg
Onion 2 chopped
carrot chopped 1 cup
Ginger, Garlic paste 2 teaspoons
Tomatoes 3
Soak Almond half cup
Rinsin half cup
Salt to Taste
Black paper crushed
Cumin seeds 1.5 tablespoon
Black cardamon 2 to 3
Sugar 1 tablespoon
Ghee 100 gm
Recipe:
Firstly ready Mutton stock with less space because it a pakhtun dish and pakhtun not like much of spiece they like real meat taste
bring a large pan and add mutton, cumin seeds, black cardamom, salt, and 2-liter water
cook till water has half of the Quantity
after ready stock set aside
bring another pan and add ghee
chopped onion fry till golden brown
then add tomato, ginger, and garlic paste and fry for two minutes
then add stock check salt if you want to add to the taste and black paper is not necessary it's up to your taste
when stock has a first boil add rice and cook
now caramelized nuts and carrots main part of pulao
bring a small pan add ghee 2 tablespoons add carrot and sugar fry for 3 to 5 minutes set aside
then add almonds and fry set aside
Then add rinsing and fry for 2 to 3 minutes and set aside
Now check your rice if stock is dry and rice cooked 90 percent it means now your rice is ready for the dam(steam)
Then almond, rinsing, carrot add on rice and cover low flame steam for 10 minutes in this 10 minutes you make green mint raita.
Green Mint Raita
Ingredients:
Yogurt 500 gram
Mint few leaves
Coriander few leaves
Garlic clove 2
Green chilies 2
Salt to taste
Recipe:
add yogurt, mint leaves, coriander leaves, green chilies, garlic clove, and salt to taste now grind well
now put in raita bowl
add some mint leaves for garnish
now chk your pulao and dish out rice
for garnish, some caramelized carrot, almond, and rinsing add to the dish
now your yummy delicious pulao with green mint raita is ready
